I never saw fries used as a pizza topping until I moved to Italy. Every rule has its exceptions.

Italians are right to be proud of their culinary heritage. But tastes change over time. Imagine if Italians had rejected the tomato when it was introduced, since it wasn’t a traditional part of their diet?

With all that said, though, I miss pizza from Napoli…
